Lomo Saltado – Peruvian Food Makes Good in the U.S.

When I first heard about this Peruvian dish I thought: a stir-fry with french fries? Will this even taste good and can I get all the ingredients?  Beef and vegetables are stir fried and served over french fries and white rice. Now I am a big potatoes and rice lover, so I had to try this recipe. The ingredients are very simple and you will have most of them in your pantry or refrigerator.  I tried this dish with the frozen french fries but I have done some research and others suggest you make your own french fries. The next time I make this dish on a weekend I will try this idea.  The ingredients include beef tenderloin, onions and tomatoes with cumin and garlic and soy sauce.  The cumin and garlic give the Lomo Saltado a wonderful unique taste while soy sauce and chili pepper give it that extra kick.  The dish can be made in about an hour including frying the french fries and making the white rice.  It’s perfect as a dish for one, two or a crowd and can easily be made after work.  You can pretend you are in a foreign country but since the ingredients are items that you would find in your home, this dish is not a big stretch outside of your comfort zone.
